Hot New Manhattan Dessert Is Part Asia, Part USA

It’s called “Japanese bouncy cheesecake” and it’s the latest dessert craze in New York City. The fluffy sweet concoction, hugely popular in Asia, is sold at a newly-opened Pan-Asian bakery in Manhattan that already boasts long lines of customers waiting to indulge. Keki Modern Cakes owner Lawrence Wai recruited executive chef Kevin Kim to recreate the pastry, whose secret ingredient is the French meringue added for bounciness. It is made with cream cheese from Amish farms, organic milk and free-range eggs. The top is an airy cake that melds into a dense mousse.
