New Bakery Technology Produces “Fun Cakes” And Sandwich Pancakes

A Dutch bakery machine manufacturer has adapted a Japanese cake concept to American tastes, hoping to create a niche market in the U.S. baking industry. Cake Concepts says the idea is to veer away from stale cake traditions, like layer cakes and Swiss rolls. The company has developed a technology, along with the appropriate machinery, to create Fun Cakes and sandwich pancakes. The machines make Fun Cake characters with a filling inside using closed molds. Unlike the original Japanese versions filled with bean paste, the Cake Concepts sponge-type shells contain chocolate, fruit, and savory products like cheese.
