No Need To Toss Out Sprouted Potatoes: They’re Safe To Eat

British food scientists have determined that potatoes that have begun to sprout are not harmful to eat and needn’t be thrown away. Noting that people in the U.K. waste £230 million ($311 million) worth of potatoes every year, the scientists at the University of London said consumer only need to cut the sprouts to get them to taste the same as fresher potatoes. Even soft and spongy potatoes are still edible, but may have a slightly different flavor.  [ Image credit: © Wikipedia  ]
