Salt of the Earth Says Its Mediterranean Umami Ingredient Can Cut Salt Content Of Snacks

The Israeli sustainable sea salt flavoring company says that its clean label ingredient can help improve a snack’s Nutri-Score by reducing sodium content. The nutrient score shows that the Mediterranean Umami ingredient, derived from plant extracts containing umami flavor compounds, can be used as a 1:1 drop-in replacement for salt in snack applications. Available in powder and liquid form, the ingredient cuts sodium by up to 45 percent, improving the Nutri-Score by 3-5 points. That, in many cases, is enough to improve the overall letter score, the company claims. The 5-color Nutri-Score nutrition label, used by European countries and companies like Nestlé and Danone, converts the nutritional value of products into a simple letter/color code.[Image Credit: © Salt of the Earth Ltd.]
