Spent Beer Brewing Grains Upcycled Into Healthful Snack Chips And Dip

Danish brewery and brew/food tech laboratory Science Brew has developed a snack product from upcycled brewers’ spent grain (BSG), a nutrient-rich by-product of the beer brewing process that is mostly discarded (42 million tons a year worldwide). After the beer is brewed, the company separates it into a liquid and dry matter that is ground into a flour, mixed into a dough, rolled out, cut into triangle shapes, and baked. According to the company, the resulting chips “resemble and taste” like nachos: voila “Beerchos,” rich in protein, antioxidants, and fiber. The company also developed from upcycled ingredients a dip for Beerchos that purportedly has a “consistency similar to tapenade” (an olive/anchovy/caper paste). Science Brew plans to scale-up production to market the new products itself, but is also considering licensing out the technology.
