Study Finds Blood Sugar Meter Helps Assess Potato Quality For Crisp Production And Acrylamide Levels

A three-year study by researchers from SINTEF and Norwegian food packaging company Produsentpakkeriet found that measuring glucose concentrations in potatoes using a blood sugar meter offers a quick and accessible way to determine if the potato’s sugar content is suitable for crisp production. Higher sugar content in less mature potatoes is associated with increased acrylamide levels, harmful chemicals formed during high-temperature cooking, which are linked to health risks. The study recommends monitoring glucose content to assess the potatoes' readiness for harvesting.
