Swiss-Born Baker Shares His Techniques For Creating Unique Artisan Breads

An artisan bread chef recently shared recipes and techniques for making traditional and intricately designed breads from several cultures at a bread festival in Central Ohio. Ciril Hitz, born in Switzerland but now living in New England, specializes in bread sculpture and such unique techniques as stenciling designs – flowers for example – on loaves of bread. Hitz makes traditional yeast breads, but has also come up with a recipe for unleavened dough whose clay-like consistency allows sculpting into various shapes and colors. He has written two books and created several how-to DVDs that illustrate his personal formula for turning simple bread dough into intricate designs.
