EHL Ingredients foresees chickpeas playing a starring role in snack and other manufacturing in the coming year, as meat-free and plant-based foods continue their foray into the mainstream. Chickpeas are gaining traction because of their versatility and nutritional value, The main ingredient in hummus and falafel, popular with vegans and vegetarians, chickpeas are also being widely consumed dried, puffed, or roasted as a snack, or coated in flavor. High-protein chickpeas are also being incorporated into pasta, rice, salads, Middle Eastern stews or tagines, curries, Italian soups, and as a meat replacement in meat-free burgers, fritters, and fajitas. Other key food trends for 2021, according to EHL, include mindful eating and wellness trends such as allergen awareness and organic foods.
